Pink Beetroot Pasta Recipe
The most beautiful and fast pasta for warm days.
Recipe:
250g pasta
Sauce:
250g cooked beetroot
1 cup (250g) cashew
1 spoon olive oil
1 spoon of garlic
2 spoons nutritional yeast
salt
black pepper
mixed herbs
Topping:
snow pea sprouts or basil
hemp seeds
pumpkin seeds
That's probably the most loved pasta at home. You only need 10 minutes to prepare this delicious and nutritious pink pasta.
1. Start preparing your pasta of choice.
2. In the meantime, get a small pot and add the cashews with just enough boiled water to cover them and let it sit for 5 min. (this process will allow the cashews to soften, also keep the water as we will add it to the sauce)
3. In a food processor/blender, add all of the sauce ingredients listed above plus the water your cashews were sitting in.
4. It's done! Just blend the pasta with the sauce and sprinkle with your favourite toppings with a drizzle of olive oil on top for that extra shine.
